Owner of Goose Hospitality Management
Scott is a native to Granby, Connecticut and moved down to the Tar Heel state in 2000. He spent many years in the southern hospitality industry, where he found enjoyment in seeing his customers leave with a smile and raving about his service. He moved back to Connecticut when an opportunity came to open his own restaurant and bar, Otter’s Pub. After many successful years of business, he decided to move with his daughter back to North Carolina in 2009. From this time, he spent many years working in various restaurant and hospitality companies including Hibernian Company and Starwood Hotels. By 2015, Scott had decided that he wanted to work for himself again and opened Country Fried Duck. A few months later, he absorbed The Shoppe Bar and Meatball Kitchen and Esperanza. In 2016, he then made plans to open up One Fish Two Fish and in 2017 he also absorbed Moonlight Pizza Company. With his ever-expanding restaurant group, it’s hard to find him not working but if you do, you will find him spending time with his daughter Emma or relaxing with his 16 year-old dog, Scarface.
Director of Operations
Brandy has been in restaurant operations for over 15 years and joined Goose Hospitality Management, Inc. in April 2017. A graduate of UNC Chapel Hill, she has a deep love of the Triangle area and the rich blend of cuisines and culture it has to offer. Her experience managing many different independent and multi-unit restaurant concepts is a solid foundation for her involvement with GHMI but her love for learning new things and helping others achieve their goals is what drives her. As the daughter of a 5th generation commercial fisherman, she values hard-work, family, and connecting with people from all walks of life. If you ever catch her not working, you may find her enjoying live music with her husband at one of the area's many outdoor venues, walking her fur-baby Winnie, or working in her garden.
Corporate Executive Chef
Bryan Kowalski was born and raised in Toledo, Ohio before attending The Cooking and Hospitality Institute of Chicago Le Cordon Bleu. After graduating, he worked in a variety of Chicago restaurants all with different areas of focus, including Spring, an Asian inspired seafood restaurant and Green Zebra, a restaurant with a strong vegetable focus. Bryan then made his way to Raleigh where he first got to work at Bia at Solas, which featured New American Cuisine. This was his first encounter working with both Scott and Lauren Kleczkowski. After Bia at Solas, Bryan began working at Jimmy V's Osteria and then family brought him back home to Toledo where he worked at Final Cut located in the Hollywood Casino. When Scott called Bryan, and asked if he wanted to come and join Goose Hospitality Management Inc, he jumped at the opportunity to work beside Scott and Lauren again. Bryan has so far enjoyed his time back in the south with the amazing southern cuisine and abundance of fresh produce. When not at work, you can find Bryan trying to catch a hockey game on TV with his beloved dog Callie who rarely leaves his side.
